The student from the Laboratory of Food Biochemistry, Francielle Miranda de Matos, received an Honorable Mention for the presentation of her work entitled “Effects of simulated digestion on the antioxidant, antidiabetic, and antihypertensive properties of black cricket (Gryllus Assimilis) protein hydrolysates” at the 14th Symposium Latin American of Food Science. The work was developed in partnership with the student Gabriela Boscariol Rasera, under the supervision of Prof. Dr. Ruann Janser Soares de Castro.
The 14th edition of Slaca received more than 800 works and it is a source of great pride, the highlight received by our student!
